About This Course

Mata kuliah ini membahas tentang atribut sensori dan cara penilaiannya menggunakan indra manusia, pengendalian sarana dalam pengujian sensori, metode evaluasi sensori, pengaruh faktor psikologis dan fisiologis, serta pengukuran respon dalam pengujian sensori. Penerapan evaluasi sensori di industri pangan seperti dalam pengembangan produk, pengendalian mutu, dan prediksi umur simpan juga dipelajari. Mata kuliah ini memiliki praktikum untuk melatih mahasiswa dalam melakukan evaluasi sensori (sebagai preparator dan panelis) dan mengolah data secara statistik.
